Daylesford has a rich history in wine production dating from the 1860s. In 1892 there were 30 growers. Our vineyard is family owned, and the vines were planted by hand in 1999.
Our wines are grown at altitude [620 m above sea level]. We are one of the coldest grape growing vineyards in Australia, producing high-quality cool climate wines with high natural acidity and intense yet elegant structure. We use dry farming methods and utilise responsible growing techniques, spraying routines and environmentally sustainable practices. We hand pick our grapes and use local wine makers
Tasting notes:
Pinot Grigio
Bright straw colour with aromas of citrus and pear with a strong acid drive and a fresh mineral taste on the palate. Finely textured tannins and lingering acidity. Perfect to accompany Asian foods, chicken and fish. “The red wine drinkers white wine”.
Chardonnay/Gewurztraminer blend
A unique blend with a Chardonnay character but with a fine Gewurztraminer finish on the back palate. Perfect for summer drinking and to accompany Asian foods and fish.
Rosé -Gamay and Pinot Noir blend. Beautiful light pink in colour with a raspberry/cherry taste and a fine acid finish. The Gamay and Pinot Noir blend is perfect, and you can taste hints of both grapes here. A unique blend ideal for summer drinking on the balcony or veranda.
Sparling Rosé [Gamay and Pinot Noir blend]
Made in the French method traditional style from a rare blend of Gamay and pinot noir in the Macedon Ranges tradition. A beautiful pink colour with light bead complexity
Sparling Pinot Grigio
Fermented in traditional champenoise method. A light and bubbly delight to drink.
Pinot Noir / Gammay Blend
A unique blend that delivers a medium bodied lighter style of red having been matured in oak.
